Denver Restaurateur Elena Cabrera Builds Regional Dining Group

Elena Cabrera opened her first restaurant, a small Denver spot serving modern interpretations of dishes from her family's Mexican culinary heritage, eleven years ago with a handful of tables and a staff of four. Her company, Cabrera Restaurant Group, now operates five distinct restaurant concepts across the Denver metro area, each with its own culinary identity rather than a repeated single-concept chain.
"I never wanted to just open the same restaurant five times," Cabrera said. "Each concept exists because I had a specific idea I wanted to explore, not because it was the easiest way to scale." The group's restaurants range from an upscale tasting-menu concept to a casual, fast-service taqueria, deliberately spanning different price points and dining occasions.
Building a Team That Can Run Multiple Concepts
Managing five distinct restaurant concepts requires a different organizational structure than a single-concept chain, and Cabrera has built a central team handling shared functions like purchasing, human resources, and marketing, while each restaurant maintains its own executive chef with significant creative autonomy over menu decisions. This structure, she says, has been essential to maintaining distinct culinary identities across the group rather than the concepts blending together over time.
Cabrera has also prioritized promoting from within, with several of the group's current executive chefs having started as line cooks at her original restaurant. She says this internal promotion pipeline has been important for maintaining culinary standards while giving talented staff a career growth path within the company rather than losing them to competitors.
Navigating a Difficult Restaurant Industry Environment
The restaurant industry has faced significant cost pressures in recent years, including rising food costs and labor expenses, and Cabrera says maintaining profitability across five distinct concepts requires constant menu engineering and cost management attention. She's implemented centralized purchasing across all five restaurants to negotiate better pricing with suppliers, a benefit of scale that wouldn't be available to any single restaurant operating independently.
Cabrera says she's not actively planning a sixth concept in the near term, preferring to focus on strengthening the existing five restaurants, though she acknowledges she's said that before and has still ended up opening new concepts when the right idea and opportunity aligned.
