Dale Osgood opened his first Prairie Peak Brewing taproom in Fort Collins twelve years ago with a small home-brewing setup and a handful of regular customers. The company now operates five taprooms across northern Colorado, with a production facility that distributes to grocery stores and bars throughout the Front Range.

"I never had a grand plan to build a chain," Osgood said. "Each location happened because the previous one worked well enough to justify the next one." That incremental approach, he says, has kept the company financially conservative compared to breweries that expanded rapidly on borrowed capital.

Growing Without Overextending

Osgood has funded each new taproom largely through the previous locations' profits rather than taking on significant debt, a strategy he says has meant slower growth but far less financial risk than competitors who expanded aggressively during the craft beer boom of the past decade. Several regional breweries that grew faster have since closed locations or been acquired, a pattern Osgood says validates his more cautious approach.

The company's production facility, added six years ago, allowed Prairie Peak to expand into grocery store distribution without relying entirely on taproom sales, diversifying revenue in a way Osgood says has helped smooth out seasonal fluctuations in taproom traffic.

Navigating a Maturing Craft Beer Market

Colorado's craft beer market has grown far more crowded and competitive since Osgood started the company, and he says differentiation has become increasingly important as consumer choice has expanded dramatically. Prairie Peak has leaned into a consistent house style and strong local community ties at each taproom location rather than chasing every emerging beer trend.

Osgood says he's considering a sixth location, though he's being deliberate about site selection, having turned down what he considered under-performing potential locations in favor of waiting for the right market opportunity.
